Corn, Black Bean, Hominy (no tomato) Salsa



(My adaptation of a classic)

1 – 15oz. can corn (rinsed and drained)

1 – 15oz. can black beans (rinsed and drained)

1 – 15oz. can hominy (rinsed and drained)

1  red pepper, diced

2 jalapenos (removed seeds for mild, add seeds for hot – but be careful.  not many seeds needed)

Take jalepeno seeds out with a mellon baller. Never touch them with your fingers.

½ large red onion, diced

½ C  snipped cilantro

2 limes zested and juiced

¼ C  extra virgin olive oil

1 tsp. salt

Let the kids help!

Mix together.  Refrigerate for about an hour.  Serve with (lime) tortilla chips or on top of favorite recipe.
