Veggie Lasagna

Stir Fry in:

2 garlic cloves

Olive oil for stir frying

Stir Fry these veggies*:

2 carrots diced

1 med zucchini

1 yellow squash

1 med. onion diced

1 C. broccoli

½ C celery diced

½ C red pepper

½ C green pepper

(*Pick veggies that your family enjoys.  Be creative!  Additional options: olives, mushrooms or eggplant.)


1 jar (28 oz.) spaghetti sauce

1 egg

1 C cottage cheese

9-12 cooked lasagna noodles

Top with:

2 C mozzarella cheese

1 sleeve of Ritz crackers crumbled or ½ package of Italian bread crumbs

Heat oven to 350*


Mince garlic in olive oil and warm pan.

Add veggies and stir fry until tender.

Mix sauce, egg and cottage cheese.

Spray bottom of pan with olive oil.  Layer sauce, veggies and noodles 3 – 4 times.

Sprinkle mozzarella cheese on top layer and top that with cracker or bread crumbs.

Make a small tent out of aluminum foil on top of lasagna.  Bake 45 minutes under tent.  Remove the tent for the last 15 minutes to allow cheese and crumbs to brown.

Serves 12
